GMG Sweet Pellet Smoked Salmon

Smoked salmon not only tastes great but offers health benefits as well. It contains Omega-3 which lowers blood triglycerides and helps prevent clotting. It is high in Vitamin E, an important antioxidant. It is low in carbohydrates. Eat up!
INGREDIENTS:
½ cup of Kosher salt
¼ cup garlic powder
¼ cup onion powder
2 cups of brown sugar
3 teaspoons white pepper
Salmon Fillets
Marinade:
2 cups of brown sugar
½ cup of Kosher salt
¼ cup garlic powder
¼ cup onion powder
3 teaspoons white pepper
This will make enough for about 4 medium salmon filets.
Let’s Get Started:
Lay a sheet of Saran Wrap on the counter and sprinkle a layer of the dry mix on it. Then, place the first filet on it, skin side down. Sprinkle a layer of the rub mix on this piece of salmon and lay the next filet on it, skin side up. Then, add a layer of dry mix on the skin of this filet, and then place the next filet on that, skin side down. Continue until you’ve used up all the filets. Wrap the whole thing up in Saran Wrap and seal tightly.
Refrigerate for 12-36 hours, flipping every six hours. Remove form the refrigerator and wash the salmon.
Dry on a wire rack at room temperature for about two hours, or until a slight yellowish film appears on the salmon.
Smoke at 150-180°F (66-82°C) for 5-8 hours to a minimum internal temperature of 150°. held for 30 minutes. It will be safe but juicy at this point; extending the time will result in drier salmon if that’s your preference.
After removing from the grill, be sure to wrap in aluminum foil for about 30 minutes to settle the juices.

Prep Time 15 MINUTES Cook Time 45 MINUTES Pellets APPLE SERVINGS 10 INGREDIENTS 1 1/4 Pound sliced bacon 2 1/2 Can Jumbo homestyle refrigerator biscuits 1 1/4 Cup packed brown sugar 1 1/4 Cup maple syrup 1 1/4 Cup (2 sticks) unsalted butter 5/8 Cup water 2 1/2 Teaspoon ground cinnamon Cooking spray, for greasing STEPS 1 When ready to cook, set the Traeger temperature to 400°F and preheat with the lid closed for 15 minutes. 2 Place the bacon directly on the grill grates. Close the lid and cook on each side for 5-8 minutes, depending on the thickness of your bacon. 3 Remove the bacon from the grill. Reduce the grill temperature to 350°F. Allow to cool slightly, then crumble the bacon and set aside. 4 Remove the biscuits from the can and cut each biscuit into 4 pieces and peel each piece in half. Place the biscuit pieces in a large bowl and set aside. 5 In a saucepan over medium heat, add the maple syrup, brown sugar, butter and water and bring to a boil. Reduce the heat and simmer for 1 minute. Stir in the cinnamon. 6 Grease a bundt pan with cooking spray. In the bowl with the biscuit pieces, add the crumbled bacon and syrup and mix to coat. Pour into the greased bundt pan and spread around evenly. 7 Place the bundt pan directly on the grill grates. Close the lid and cook until the biscuits are cooked through, 30-35 minutes. 8 Remove the bundt pan from the grill and invert the pan onto a serving platter. Serve warm. Enjoy! The argument for burgers and whether to use lean and fat ground beef will never get settled. Personally, I prefer the leanest I can afford. I also like to make two thin patties for a “double” rather than one thick one, but that’s just me. Everyone has a special way to make their burgers and we won’t stop you from doing your own thing. We just want to give your our take on burgers and we wanna see what you guys some up with. Their are so many possibilities for some beef a bun and some fixing and that’s what a hamburger is all about. If you want, add some diced Ortega chilies. Knead these into your burger. You should cook this until medium-well to insure the bacon cooks thoroughly. If you make thick burgers, sauté the onion/bacon mix for a couple of minutes on your stove top before you mix it in with your ground beef.
